A fall-themed demo cooking class will showcase the rich, comforting flavors of the season. Chef Mickey will present a menu beginning with a roasted delicata squash salad featuring baby arugula, toasted pepitas and a maple vinaigrette. The main course includes seared chicken thighs with an apple-cider pan sauce, served with mashed sweet potatoes and crispy sage.
Dessert will feature a rustic apple galette with a brown butter pâte brisée crust and crème fraîche, with instruction on key techniques such as fruit preparation and blind baking. Participants will also enjoy a seasonal Apple Brandy Old Fashioned curated by the resident sommelier. All dishes will be served at the end of the class.
